Shakshuka with feta
I love one pan meals and this easy one is such a win!
1 tbl olive oil
1 medium onion
1 red pepper
2 cloves garlic
8 fresh tomatoes diced
salt and pepper
Heat some olive oil in a skillet and add the onions and peppers to cook for about 15 minutes. Stir in the garlic and cook for another minute.
Add diced tomatoes, cumin, paprika and coriander. Season with salt and pepper.
Bring to the boil, reduce the heat and let it simmer for 10-15 minutes.
Crumble in some feta cheese and stir.
Create 6 nests and gently crack the eggs in. Place your skillet in a preheated oven (180 degrees) and cook until the eggs are set.
Garnish and serve with some crusty bread!
